Cauliflower and potatoes make a perfect pairing, not only for their delicious taste but also for their nutritional benefits. Together, they create a satisfying side dish with a delightful combination of flavors and textures. When roasted to a crispy finish, both the cauliflower and potatoes take on a satisfying crunch, elevating each bite.
For optimal storage, allow the roasted cauliflower and potatoes to cool to room temperature within two hours of cooking. Once cooled, transfer them to an airtight container or resealable bag and store in the refrigerator for up to 4–5 days. If you wish to store them for a longer period, spread the vegetables in a single layer on a baking sheet to freeze individually before transferring them to a freezer-safe container or bag. They can be kept frozen for up to 3 months. To reheat, pop them in the oven or air fryer at 375°F for 10–15 minutes to restore their crispy texture. Alternatively, for a quicker option, you can microwave them, though they may lose some of their crispiness.

4 cups of sweet potatoes (2 sweet potatoes)

4 cups of carrot (4 carrot stalks)

4 cups of potatoes (3 potatoes)

1 cup of onion (1 onion)

¼ cup of olive oil

1 tbsp of salt

1 tbsp of Italian seasoning
Directions
Preheat oven to 400ºF. Prepare a full-size baking sheet pan with parchment paper.
Skin carrot stalks. Cut cauliflower, sweet potatoes, potatoes, carrots, and onion into even cubes and place into a large bowl.
Add olive oil, salt, and Italian seasoning. Mix the cubes to evenly coat with olive oil, salt, and seasoning.
Spread mixture evenly onto a full-size baking sheet pan.
Place into the oven and bake for 55 minutes. Broil at 425ºF for 5 minutes. Enjoy!
