These oven-baked French fries are a deliciously crispy and healthier alternative to the deep-fried version—perfect for snacking, meal prepping, or serving alongside homemade burgers. Made with just three ingredients—potatoes, olive oil, and salt—they're easy to whip up in big batches and even easier to devour! Soaking the fries for a couple of hours before baking helps remove excess starch, giving them that signature golden crunch. After a slow bake at 400°F (200°C), they come out beautifully crisp on the outside and soft on the inside—just the way fries should be.
To store: Let the fries cool completely, then transfer to an airtight container and refrigerate for up to 4–5 days.
To reheat: For best results, reheat in an oven or air fryer at 375°F (190°C) for 5–10 minutes until they’re hot and crispy again. Avoid the microwave—it makes them soft and soggy.

Directions
Rinse the potatoes and cut them using a French fry cutter.
Place the cut fries in a large bowl and cover them with water. Let them sit for at least 2 hours to remove excess starch. (Optional: You can skip the soaking step, but it’s worth the extra effort for that crispy texture.)
After 2 hours, drain the potatoes and dry them thoroughly with paper towels or lay them out to air dry. Pro tip: Don’t skip this step! The drier the potatoes, the crispier the fries! 😉
- Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
- In a large bowl, toss the dried potatoes with olive oil and salt until evenly coated.
- Spread the fries in a single layer on the prepared baking sheet.
- Bake for 1 hour and 10 minutes, flipping the fries halfway through. For extra crispiness, bake for an additional 15 minutes after flipping.
- Once crispy and golden, remove from the oven and enjoy!
